I've found myself creating healthy juices recently in an attempt to reduce the amount of inflammation in my body. I was astounded at how much of the vegetable juices I was creating ended up as a slushy pulp that I could see nothing to do with other than throw in the bin.
The second time I juiceed I came up with this recipe to use the leftover pulp. And they're delicious.

Ingredients
- The pulp of 1 bunch of celery, 3 carrots and one lemon - with all the juice squeezed out
- Half a cup self raising flour
- Half a cup plain flour
- One cup milk (I used lactose free)
- One egg
- A quarter of a cup of parmesan cheese (grated)
- A high smoke point oil for frying (I used avocado)
Method
Combine the non pulp ingredients in a bowl and mix well until they're the consistency of pancake mix
Add the vegetable pulp mix and combine until evenly distributed
Heat your frying oil and fry tablespoon sized fritters until brown on both sides
Try not to eat the entire batch in one sitting.
